Authentic Italian recipe for Tiramisu

Ingredients

1) 6 eggs

2) 4 cups of sugar

3) 8oz mascarpone cheese

4) 4 Cups of coffee (cold and lightly sweetened)

5) About 40 savoiardi (Italian lady fingers)

6) Unsweetened cocoa powder

7) Optional 3 table spoons of marsala wine, san marzano or rum

Preparation

1) Separate eggs yolks from the white using two different bowls

2) Add sugar to the egg yolks and whisk well to form a light yellow smooth cream (manually or with a whisker, I prefer manually)

3) Add mascarpone cheese to the whisked eggs and mix well together (manually or with a whisker, I prefer manually)

4) Whip the eggs white to form a dense cream till it stays stick to the bowl and it will looks like a whipped cream (manually or with a whisker, I prefer manually)

5) Add the whipped eggs white to the mascarpone cheese and eggs yolks prepared at point 3 and gently mix them together

6) Dip the savoiardi in the coffee, one at the time, making sure they are drenched but not soaked and place them in a glass casserole dish (deep enough to contains at least 2 layers of savoiardi) to form a layer evenly distributes and closer to each other

7) Spread evenly the mascarpone cream prepared at point 5 on top of the layer of savoiardi to cover all of them

8) Repeat point 6 to form a second layer of savoiardi

9) Repeat point 7 spreading the rest of mascarpone

10) Do not sprinkle with the cocoa powder just yet

11) Cover with a plastic film and let it rest in the refrigerator for about 6 hours

12) When ready to serve sprinkle the cocoa powder evenly to cover all mascarpone

13) Buon appetito (enjoy your meal)

14) Option 1, add the marsala, san marzano, or rum to the coffee before dipping the savoiardi

15) Option 2, add the marsala, san marzano, or rum directly on top of your portion of tiramisu after having slightly cut the top (this option may work if you have children)
